Thai Beef Red Curry



To continue theme from previous post; Thai inspiration is still going on!

Ingredients:
2-3 tbs oil (peanut oil preferably)
500 gr chuck steak (or other beef cuts), sliced
2 tbs Thai  red curry
1 can coconut milk (or light cream)
200 gr beans, sliced
1 small red capsicum, sliced
2 tbs peanut butter
1-2 tbs fish sauce
4 kafir lime leaves, sliced
brown sugar to taste (2-3 tsp)
coriander leaves and chopped peanuts for garnish

Method:
Heat half of oil, saute beef until it changes colour. Take out. Heat the rest of oil, add red curry. Mix well, then pour coconut milk, add meat and other ingredients. Cook for 1 hour, or until meat tender.
Garnish with coriander leaves and peanuts; serve with rice.




Tai Crveni Kari sa Govedinom

Da se nastavim sa prethodnim postom; inspiracija iz Tajlanda je jos prisutna!

Potrebno:
2-3 K ulja (po mogucnosti od kikirikija)
500 gr govedine / junetine za kuhanje, tanko izrezane 
2 K Thai crvenog karija (vidi*)
1 konzerva kokosovog mlijeka (ili 'lakseg' krema)
200 gr okruglih mahuna, izrezanih na pola
1 manja crvena paprika, izrezana na prutice
2 K kikiriki maslaca
1-2 K fish sosa
4 lista limete, izrezane
braon secer prema ukusu (2-3 male k)
lisce korijandera i kikiriki za ukrasiti

Nacin:
Zagrijati polovinu ulja, proprziti meso pa izvaditi. Dodati ostatak ulja, ubaciti kari, promijesati pa zaliti sa kokosovim mlijekom. Ubaciti meso i ostale sastojke i kuhati oko 1 sat ili dokmeso ne omeksa. Ukrasiti liscem korijandera i kikirikijem; sluziti sa rizom.

Crveni kari
6 suhih crvenih papricica (chili)
2 srednja crvena luka, sjeckana
3 cena bijelog luka, protisnuta
1 K ribane limunove korice
2 k paste sasusenih skampa (Azijski proizvod)
1 K kima u prahu
1 K paprike crvene
2 K turmerika
1 k crnog bibera
(sve sameljite ili istucajte dok ne dobijete guscu pastu - drzite u frizideru) 




                        















Chick Pea and Okra Curry


Okra (Lady fingers) is not very much used for cooking in many families, including mine. I think it's time to change that. This is a very nice tasting, easy, exotic, vegetarian dish. Perfect for meatless Mondays!

Ingredients:
2-3 tbs oil
2 medium onions, sliced
2-3 garlic cloves, crushed
1 tsp turmeric
1,5 tbs Garam Masala
1 chilli, sliced
500 g Okra (small-ones) fresh, canned or frozen
1 can chick peas, drained
2-3 large tomatoes, diced
2-4 tbs thick yogurt, or sour cream salt to taste
coriander leaves to sprinkle (optional)
Method:
Heat oil, fry onion until translucent; add garlic, spices, chilli, okra and chick peas . Stir well, add tomatoes and yogurt. Bring to boil, cook for 15-20 minutes. Season according to your taste; sprinkle with coriander. Serve with rice.

Kari od Slanutka i Bamje

Bamja je zapostavljeno povrce u mnogim kuhinjama, ukljucujuci moju. Vrijeme je da se i to promijeni... Pocela sam otkrivati razne nacine za pripremu ove egzoticne namirnice. Sljedeci recept je pogodan za vegetarijance i veoma ukusan.

Potrebno:
2-3 K ulja
2 crvena luka, srednje velicine, sjeckana
1 k turmerik praha
1,5 K Garam Masala zacina (Indijska mjesavina)
1 ljuta papricica, sjeckana
500 gr bamje (sitne)svjeze, smrznute ili konzervirane
1 konzerva slanutka, ocijedjena
2-3 veca paradajza, isjecena
2-4 K jogurta (ili kajmak / pavlaka sa manje masnoce)
so prema ukusu
lisce korijandera (po zelji)
Nacin:
zagrijte ulje, proprzite luk dok ne postane staklast. Ubacite bijeli luk, zacine, bamju i slanutak. Promijesajte; dodajte jogurt i paradajz. Zargijte do vrenja i kuhajte 15-20 min. zacinite prema ukusu i pospite korijander liscem. Servirajte sa rizom.

Thai Yellow Fish Curry


I love all Thai curry pastes; even commercial-ones are excellent. Cooking with them is versatile, easy and tasty. If you can't find already made yellow curry paste, here is Recipe for Yellow curry

Ingredients:
1 tbs oil
1-2 tbs yellow curry
1 kg bassa fillets
1 can coconut milk
1-2 tbs fish sauce
vegetables cut into small pieces (capsicum, peas, beans...)
coriander leaves for decoration
Method:
Heat oil, fry curry paste until fragrant. Add chunks of fish and coconut milk. Cover and bring to boil. Cook for 5-10 min, then add your favorite vegetables. Cook another couple of minutes, add fish sauce. Sprinkle with coriander leaves and serve over rice or rice noodles.



Thajlandski Žuti Riblji Kari

Recept za Žuti kari (
Recipe for Yellow curry )


Potrebno:
1 K ulja
1-2 K zute kari paste
1 kg bijele ribe, fileti (bas)
1 konzerva kokosovog mlijeka
1-2 K 'ribljeg sosa'
povrce rezano sitno (paprika, grasak, mahune...)
lisce korijandera za dekoraciju
Nacin:
Zagrijte ulje, ubacite cari pastu, proprzite. Dodajte vece komade ribe i kokosovo mlijeko. Pokrijte i dovedite do kljucanja; kuhajte 5-10 min), pa dodajte povce. Kuhajte jos par minuta, zatim ubacite riblji sos. Pospite korijander liscem i servirajte preko rize ili rizinih rezanaca.

Beetroot Curry


Beetroot is so good for detoxification and blood purification; I was amazed that my boys didn't complain about this meal.

Ingredients:
3 medium beetroots, peeled and sliced (like chips)
2 tbs oil
1/2 tsp black mustard seeds
1 large onion, chopped
2-3 garlic cloves, crushed
2 chillies, sliced
2 bay leaves
1/3 tsp turmeric
1 tsp cumin seeds
1 cinnamon stick
2-3 tomatoes, chopped (or 1/2 a can)
100 ml coconut milk
1 teas salt
1 lime, juice
Method:
Heat oil, add mustard seeds. When they start releasing aroma, add onion and garlic . Fry for 5 minutes, then add spices. Mix well; place beetroot, tomatoes and coconut milk inside; bring to boil, cover and cook for 20+ minutes. Stir in lime juice and salt. Serve with rice.




Varivo (Kari) od Cvekle

Za divno čudo, dečki se nisu bunili ;-)

Potrebno:
3 cvekle, srednje velicine, oguljene i sjecene (kao za pomfrit)
2 K ulja
1/2 k crnog sjemena gorusice / senfa
1 veci crveni luk, sjeckan
2-3 cena bijelog luka, protisnutog
2 male papricice, sjeckane
2 lista lovora
1/3 k turmerik praha
1 k sjemena kima
1 komad kore cimeta
2-3 paradajza, sjecaka (ili 1/2 konzerve)
100 ml kokosovog mlijeka
1 k soli
1 limeta, sok samo
Nacin:
Zagrijte ulje, proprzite sjeme gorusice. Dodajte luk i proprzite oko 5 minuta. Zatim dodajte sve zacine, promijesajte, pa ubacite cveklu, paradajz i kokosovo mlijeko. Kuhajte pokriveno oko 20+ minuta. Posolite, ubacite sok limete. Servirajte sa rizom.

Chicken Peanut Butter Curry


Family favorite!
For a quick every day dinner use already prepared red curry.
Ingredients:
600 g chicken meat, diced (your choice, I like thighs)
1/3 cup oil
2-3 tbs red curry paste
400 ml can coconut milk
1/3 cup fish sauce
2 tbs brown sugar
1/2 cup peanut butter (crunchy is better)
Coriander leaves for garnishing (optional)
Red curry - (for those who can't buy already prepared)
6 dried red chillies,
2 med onions, chopped
3 garlic cloves, crushed
2 tbs oil
1 tbs grated lemon rind
2 teas shrimp paste
1 tbs ground cumin
1 tbs paprika
2 teas turmeric
1 teas black pepper
(Blend or process all ingredients into a smooth paste. Keep refrigerated.)
Method:
Heat oil in a pan, add diced chicken and fry until chicken change it's colour. Add red curry, mix well. Pour coconut milk, and bring to boil. Cook for 10 min, add all other ingredients and mix well. Serve with rice.


Pileci kari sa kikiriki maslacem

Brzinska vecera / rucak, ukoliko imate gotov crveni kari.

Potrebno:
600 gr pileceg mesa, sjecenog na kocke (vas izbor)
1/3 solje ulja
2-3 K crvenog karija
400 ml kokosovog mlijeka
1/3 solje 'ribljeg' sosa
2 K braon secera
1/2 solje kikiriki maslaca (sa komadicima kikirikija)
Lisce korijandera za ukrasiti (po zelji)
Crveni kari (za one koji ga nemogu kupiti)
6 suhih crvenih papricica (chili)
2 srednja crvena luka, sjeckana
3 cena bijelog luka, protisnuta
1 K ribane limunove korice
2 k paste sasusenih skampa (Azijski proizvod)
1 K kima u prahu
1 K paprike crvene
2 K turmerika
1 k crnog bibera
(sve sameljite ili istucajte dok ne dobijete guscu pastu - drzite u frizideru)
Nacin:
Zagrijte ulje, proprzite piletinu. Dodajte crveni kari, promijesajte. Uspite kokosovo mlijeko, i kuhajte 10-ak minuta. Ubacite sve ostale sastojke i dobro promijesajte. Sluzite sa kuhanom rizom.

Curried Potato Bake



Favorite in my family!

Ingredients:
1 kg potatoes, peeled
750 g sweet potatoes, peeled, cut into chunks
2 teas Madras Curry
300 ml sour cream
1,5 cups grated tasty cheese
salt and pepper
Oil spray
1 cup frozen peas
chives for garnishing
Method:
Boil or microwave potatoes (separately) until tender. Leave to cool slightly. Cut into slices.
Combine sour cream and curry, season. Layer 1/2 of potatoes into a large baking dish. Pour 1/2 of sour cream, sprinkle with 1/2 cheese and peas. Repeat layering: potatoes, sour cream cheese. Bake for 15-20 min in a oven heated to 200*C. Garnish with chives.

Zapečeni Krompir sa Karijem

Potrebno:
1 kg krompira, oguljenog
750 gr slatkog (narandzastog) krompira, isjecenog
2 k Madras (blagog) kari mjesavine
300 ml kajmaka / pavlake
1,5 solja rendanog 'Tasty' sira (ili drugog)
so i biber
ulje u spreju (ili obicno)
1 solja smrznutog graska
vlasac za dekoraciju
Nacin:
Skuhajte obje vrsta krompira odvojeno ( ili stavite u mikrovalnu). Ostavite malo prohladiti. Isjecite krompir na snite.
Pomijesajte kajmak sa karijem i zacinite. U vecu posudu za pecenje stavite red krompira, pospite pola kajmaka, pola sira i grasak. pokrijte drugom polovicom krompira, zalijte kajmakom i sirom. Pecite 15-20 min na 200*C. Ukrasite vlascem.

Indian Beef Koftas


Quick, tasty, aromatic and satisfying!

Ingredients:

750 g minced beef
1,5-2 tbsp curry powder (Madras preferably)
2 gloves garlic, crushed
2 teas grated ginger
2/3 cup yogurt
2 tbsp coriander leaves, chopped
2 tbsp ghee, or oil
1 large onion, chopped
1/2 cup coconut milk
1 cup water (or less)
1 tbsp tomato paste
1/2-1 teas salt
extra yogurt to serve
Method:
Combine mince, 1/2 curry garlic, ginger and 1 tbsp of yogurt. Mix well, and shape into balls, dusting hands with flour. Set aside.
Heat ghee or oil, fry onion, add curry and mix. Stir in the rest of ingredients, and cook for 5 minutes. Add kofta balls,cover and simmer for 15 minutes. Uncover and simmer for another 5 minutes. Serve with rice, garnished with some yogurt and coriander.


Indijski cuftici sa karijem

Potrebno:
750 gr mljevene govedine
1,5-2 kasike kari praha
2 cena bijelog luka
2 kasicice ribanog djumbira
2/3 solje jogurta (gustog)
2 kasike masla, ili ulja
1 veliki crveni luk, sjeckan
1/2 solje kokosovog mlijeka (*vidi objasnjenje)
1 solja vode (ili manje)
1 kasika gusto ukuhanog paradajza
1/2-1 kasicica soli
jos jogurta za servirati
Nacin:
Umijesite meso, pola karija, bijeli luk, djumbir i 1 kasiku jogurta. Oblikujte loptice, sa nabrasnjenim rukama. Ostavite na stranu.
Zagrijte maslo, proprzite luk, dodajte curry. Promijesajte, pa ubacite i ostale sastojke. Prokuhajte 5 minuta, ubacite cuftice. Kuhajte 15 minuta poklopljeno, skinite poklopac pa kuhajte jos 5 minuta.
Servirajte sa rizom, ukraseno sa jogurtom i korijanderom.
