Fruit, Nut and Avocado salad
It is HOT today...40*C...which means salad for lunch!
Salads are often complete meals during summer in my household. We go creative with fridge ingredients; everyone adds what they like. Boys usually want something meaty (salami, ham, tuna...) while I prefer some fruit and nuts in it. Nice fresh dressing over it, and I don't need anything better.
What sort of salads do you like?
Ingredients: (for 1 person)
1-2 handfuls of salad greens (mixture)
1/4 avocado, sliced
3-5 strawberries, sliced
2-4 tbs walnuts, chopped
Orange Dressing (for 2-4 servings)
1 orange, juice + a bit of zest
4-5 tbs olive oil
pinch of pink salt
1 tsp mustard
1 tbs parsley leaves, chopped (optional)
Mix all ingredients, pour with orange dressing over it. Enjoy!
Salata sa avokadom, vocem i orasima
Danas je VRUCE...40*C...sto znaci salata za rucak!
Salate su ceste za obrok tokom ljeta u mom domacinstvu. Postajemo kreativni sa sadrzajem frizidera; svako ubacuje u svoj obrok ono sta voli.Decki obicno zele nesto 'mesno' (slama, sunka, tuna...) dok ja volim voce i orasaste plodove u salati. Fin preljev preko, i meni ne treba nista bolje.
Kakve salate vi volite?
Potrebno: (za 1 osobu)
1-2 sake mijesaneih listova salate
1/4 avokada, izrezan
3-5 jagoda, izrezane
2-4 K oraha, sjeckanih
Preljev sa sokom narandze (za 2-4 salate)
1 narandza, sok + jos malo ribane korice
4-5 K maslinovog ulja
prstohvat (pink) soli
1 k senfa
1 K lisca persuna, sjeckan (opciono)
Pomijesajte sve sastojke, pospite sa preljevom. Uzivajte!

Strawberry Jam from Microwave Oven
Following recipe is from my draft...No cooking today, as my town is hit by 45*C heat!
Why cook jam on the stove for hours, stir it all the time and be in danger of burning your skin by splashing hot jam? This method takes only 30 minutes of cooking time and gives amazing results; beautifully smelling, no preservatives, homemade low sugar jam ... no splashing and burning included!
Ingredients:
500 g strawberries (2 punnets)
1 cup sugar
juice of 1/2 lemon
(Clean jars with fitting lids)
Method:
Rinse strawberries in water and soak them for 10 minutes (this will help pesticides and other toxins resolve). Rinse again, drain and clean them. If large, cut into small pieces. Put strawberries, sugar and lemon juice into a tall glass / ceramic (oven-proof) dish that is at least twice the capacity of strawberries (so there is enough space for boiling / cooking). Cook 5 minutes on high, stir and cook for 25-30 minutes on medium, opening every 5 minutes and stirring it (this will help escape moisture from the oven). Carefully take out and spoon into clean jars. Close the lids and let it cool (as they cool, lids will retract the extra air trapped inside and hermetically lock it). After opening a jar, keep refrigerated. Unopened jars can last up to 6 months.
Džem od Jagoda iz Mikrovalne Pećnice
...iz 'drafta'...Nema kuhanja danas, jer je u mom gradu vec 45*C!
Zasto kuhati dzem na stari nacin;... satima stajati nad stednjakom, mijesati i biti u opasnosti od dobijenih opekotina od dzema sto prsce? Ova metoda uzima samo 30 minuta od vaseg vremena i daje odlicne rezultate; divan mirisan, bez konzervanasa, domaci dzem sa malo secera...bez prskanja i opekotina!
Potrebno:
500 gr jagoda
1 solja secera (250ml)
sok 1/2 limuna
(Galoni / staklenke sa poklopcima)
Nacin:
Operite jagode pod mlazom vode, ostavite ih 10 minuta u vodi (da se pesticidi i drugi toxini otope), isperite ponovo, ocijedite i ocistite. Ako su prevelike, isjecite ih. Stavite jagode, secer i limunov sok u posudu koja je pogodna za mikrovalnu upotrebu i najmanje 2 puta veceg kapaciteta (za prostor pri kuhanju). Kuhajte nepoklopljeno 5 minuta na najjacoj moci, promijesajte zatim smanjite na srednju jacinu i kuhajte jos 25-30 minuta, otvarajuci mikrovalnu i mijesajuci svakih 5 minuta (ovo ce pomoci vlazi iz jagoda da izadje). Pazljivo izvadite dzem, i kasikom ga smjestite u tegle / galone. Poklopite svaki i ostavite hladiti. Pri hladjenju, zrak koji je unutra ce se povuci i tako cete dobiti hermeticki zatvorene tegle. Neotvorene mogu trajati 6 mjeseci; jednom kada otvorite, drzite u frizideru.

Strawberry and Walnut Tart
Ingredients:
Crust-
1,5 cup flour
3 tbs sugar
pinch of salt
125 g butter, cold in pieces
1 egg, beaten
1 tbs ice cold water
Filling-
1 cup walnuts
1/4 cup sugar
2 eggs
pinch of salt
4 tbs butter, softened
1 tbs flour
10-12 strawberries, halved
2 tbs honey mixed with 1 tbs water for brushing pears
Method:
Prepare a tart tin. Preheat oven to 180*C.
Put flour and butter into a food processor. Whiz until incorporated, add egg and water. Pulls until a ball starts to form. Take out and knead a bit. Roll out (floured surface) to a 28cm circle. Put it into a tart tin. Form 2 cm edges with your fingers.
For filling - Process walnuts and add all other ingredients. Pulse until paste forms. Pour it into crust. Place prepared strawberries on top of walnut paste. Brush with honey/water mix, and bake for 30-40 minutes, or until slightly golden. Dust with icing sugar (optional).
Ljepota ovoga recepta je u tome da mozete koristiti bilo koje orasaste plodove, i voce koje je u sezoni.
Potrebno:
Podloga-
1,5 solja brasna
3 K secera
prstohvat soli
125 gr maslaca, iz frizidera, isjecenog
1 jaje
1 K hladne vode
Punjenje-
1 solja oraha, mljevenih
1/4 solje secera
prstohvat soli
4 K maslaca, omeksalog
2 jaja
1 K brasna
10-12 jagoda, prepolovljenih
2 K meda pomijesane sa 1 K vode
Nacin:
Pripremite posudu za pecenje. Ukljucite rernu na 180*C.
U elektricnoj sjeckalici, mijesajte brasno sa maslacem; dodajte sve ostale sastojke i mijesajte dok se ne pretvori u tijesto. Izvadite, mijesite jos malo. Razvaljajte na 28 cm krug. Prebacite ga u posudu, oblikujte prstima ivice 2 cm visoke.
Pomijesajte sve sastojke za za punjenje u jednolicnu masu. Uspite preko tijesta.
Rasporedite polovice jagoda po masi, premazite medenom tecnoscu. Pecite oko 30-40 min ili dok blago ne porumeni. Pospite secerom u prahu (po zelji).

Pink Lemonade

Spring has arrived in Australia, which means best strawberries are in season, and I want to share a recipe for a drink that even Von Traps loved.
Ingredients:
3/4 - 1 cup sugar
1/2 cup water
1 cup lemon juice, freshly squeezed
1/2 punnet strawberries, cleaned (120g)
Method:
Bring water and sugar to biol, stir until syrup formed. Cool a bit, but need to be warm. Put it in a food processor along with other ingredients and process. Strain and bottle it. You'll get cordial, which needs to be refrigerated (or frozen).
Pink limunada
Sastojci:
3/4- 1 solja secera
1/2 solje vode
1 solja limunovog soka, svjeze iscijedjen
120 gr jagoda, ociscenih
Nacin:
Prokuhati vodu sa secerom dok ne dobijete sirup. Malo prohladiti, pa sa ostalim sastojcima sipati u elektricnu sjeckalicu. Mljeti 1 minutu, pa procijediti i flasirati. Dobicete sirup, koji po ukusu razblazite s vodom. Cuvati u frizideru.
